1lb lean ground beef
3 med carrots sliced 1 med onion chopped
1/2 cup celery chopped
1/2 cup corn kernels
2 med potatoes diced
4 cups water
2 beef bouillon cubes
14 oz canned tomatoes
1/2 package of fresh soup herbs
Salt and pepper to taste
1 cup cut green beans fresh or frozen
Cook ground beef until brown in stock pot. Add onions with a bit of olive oil if needed. Saute until tender. Add veggies, potatoes, fresh herbs, water, canned tomatoes and bouillon cubes. Cook until vegetables are tender.
Add green beans and simmer for 15 minutes. Remove soup herbs.
Serve with a hearty bread.
